For a light & fluffy sponge use bicarb of soda (sodium bicarbonate) with an acid like vinegar/buttermilk in your cake mixture. This acid-alkali reaction produces CO2, which bubbles through the batter as it bakes #GBBO pic.twitter.com/BNQ55FVQT5
